Hi
I'm finding that even on its lowest setting, the heat from the gas rings is still too much and I can't get a decent low and slow simmer.
would any of you good folk have any recommendations on what to use to diffuse the heat, to achieve a low simmer, please? TIA

We had one of these about 10 years ago when tagines were all the rage.
Then we found the slow cooker was just as good.
Now the tagine is out in the garage somewhere, probably the diffuser too. It did work for a slow simmer though.
 
Feels like a bit of a wast of gas! If you’re always finding it to much, you could add a regulator inline to reduce the flow.
 
Or if you're careful, turn the knob between the high flame and off position - you can get a lower flame that way. I do that all the time to get a low setting for the RidgeMonkey. The dial is quite sensitive on the Cali but it's not impossible. Don't worry too much about it going out; there's a thermal valve on it I think so if it goes out, it'll fairly quickly cut the supply anyway (like a normal domestic hob).
 
We do it like RockinNRolin says. If you have a steady hand - no age trembling...- you can fine tune the flames with the knob, untill you only see tiny blue twinkles of gas coming out. You can make them so small, that in sunlight you almost don't see them, but they are there.

We do this when we boil the eggs in 8 minutes. When cooking water, first heat it up untill it allmost boils, put in the eggs, then reduce the flames to almost nothing. The eggs will cook in 8 minutes, exactly the same as with a thundering full flame, that sends 80 percent of it's energy into the cabin.

Same with our Omnia oven: fire it up for two minutes with high flames, then let the oven simmer.

These very tiny flames are prone to be blown out by the smallest blaze of wind coming through the window behind the glas plate. Indeed the thermal valve will then close the gas pipe immediately.

Lakeland diffuser does a great job when cooking porridge and risotto. We have one in the van and one in the house.
